3. Contemporary food hall
At Colorado State University in Fort Collins, Colo., students returning to campus will be able to grab a bite to eat at The Foundry, the school’s new food hall. The space is part of an $11.2 million renovation that will create one centralized food hall out of two dining concepts that share a kitchen but have individual dining spaces. The renovated space will offer eight micro-restaurants, including an Italian street food concept and an eatery dedicated to vegan, vegetarian and sustainable dishes. Officials say that the decor will include midcentury modern furniture with a contemporary twist, paying homage to The Foundry’s roots, as the space was built in the ’60s.
