The Sodexo dining team at Northwestern State University in Natchitoches, La. has launched a new customizable concept for students.

Located inside Iberville Dining Hall, The Inferno offers students a weekly rotating menu of customizable dishes such as ramen and baked potatoes.

The concept allows students to have greater control over their meals. When ramen was on the menu, for example, students could personalize their bowls with a variety of broths, proteins, toppings and more.

The idea for the concept came from feedback shared by students in surveys.

Build-your-own bars continue to be popular in the college dining segment as a way to offer greater variety to students.

Operators have expanded their build-your-own options over the years to include dishes such as noodles, sushi, poutine and more.
