Letter of the law
Whether it’s K-12, hospitals or senior living, noncommercial operations have to jump through hoops of ever-evolving regulation and red tape. Operators say a lot of potential hires might flock to restaurants because they don’t want the fuss of complying with legislation like the Healthy, Hunger-Free Kids Act.
Aaron Phillips, senior director of food and nutrition at St. Anthony’s Medical Center in St. Louis, says restricted diets and regulatory compliance can be a deterrent for workers, who must be extremely detail-oriented to ace the job.
Little do recruits know, staying on top of those small details might help prepare them for a leadership role down the road. “I have always wanted to start my own business, and this experience has given me great insight to the operations and financials of a small business,” Phillips says.
