Sustainability champions
In the next five to 10 years, operators will add sustainability specialists, says Jim Meinecke, residential dining coordinator for Penn State Food Services in State College, Pa. Right now, student workers help take on Penn State’s sustainability initiatives, but Meinecke says that in the future, that won’t be enough. “When you think about the ramifications of some of the products we’re using and some very real issues like food waste and food insecurity, there will be a need for a full-time position devoted to this at some point,” he says.
