We have a very diverse employee and patient population at the hospital. They embrace strong flavors, and we are known for having out-of-the-ordinary foods. I am working on adding African food to my menu rotation. This past spring, I added a lamb suugo, a typical dish from Ethiopia, and it is still one of our best-sellers. I take this as a hint that people like bold flavors and are not afraid to try something different.
