Yucatan Chicken
This chicken delivers flavors of the Yucatan with spices and plenty of citrus.
Ingredients
8 chicken breasts
2 tbsp. ground cumin
2 tbsp. minced garlic
1.5 cups pineapple juice
1.5 cups orange juice
2 tbsp. dried oregano
1 tbsp. tabasco sauce
1.5 cups lime juice
16 fresh cilantro sprigs
Steps
- Mix all ingredients except cilantro. Add chicken and let marinate overnight.
- Lightly oil flat top grill and cook until chicken reaches internal temperature of 165°F.
- Garnish with fresh cilantro. Serve with your favorite tropical vegetable and grain.
