With a large vegetarian and vegan population, the university of Colorado, Boulder's campus bakeshop decided to make this vegan version of popular Rice Krispies Treats. These feature brown Brown Rice Krispies, peanut butter and chocolate.
1 lb. bittersweet chocolate
1 lb. semisweet chocolate
8 oz. vegan butter
4 oz. shortening
8 oz. brown sugar
2 lb. powdered sugar
2 lb. + 4 oz. peanut butter
1 cup corn syrup
1 cup soy milk
1 lb. + 4 oz. Brown Rice Krispies Cereal
1. Melt chocolates, add butter and shortening. Mix until melted. Combine sugars and peanut butter.
2. Add corn syrup and soy milk. Mix until smooth. Add cereal, mix 2 to 3 revolutions.
3. Pour in chocolate/butter mix. Mix until crisp is coated.
4. Scale 10 lb. per greased sheet pan. Cool and cut into 8-by-12-inch portions.
