Peach, Blueberry and Maple Grunt (Dumplings)
Have an abundance of peaches? These simple dumplings are a great way to use excess fruit and they contain almost no sugar.
Ingredients
Fruit:
2 cups Very Ripe Peaches, diced
2 cups fresh or frozen blueberries
½ tsp Nutmeg
½ tsp Cinnamon
¾ cup Maple Syrup
1 Tbsp Lemon Juice
½ cup water
Dumplings:
2 cups flour
4 tsp baking powder
½ tsp salt
1 Tbsp Sugar
2 Tbsp Butter
1 cup Milk
Steps
- To make fruit: Add all ingredients to skillet and heat over medium high heat until softened.
- To make dumplings: Mix all ingredients together into a soft dough.
- Drop spoonfuls of dough on top of hot fruit in skillet.
- Cover skillet tightly with lid and simmer 15 minutes.
- Serve with scoop of vanilla ice cream.
