Bottled alcohol-free spirits are growing in number and scope, with zero-proof gin, tequila, bourbon and aperitifs widely available. At the Commons Club in New Orleans, bartender Heather Blanchard uses a non-alcoholic Italian orange aperitif and house-made lavender syrup to create a mocktail similar to an Aperol spritz.

Ingredients

Honey lavender syrup

½ cup lavender flowers

½ cup honey

½ cup sugar

2 cups water

Orange spritz

1½ oz. non-alcoholic Italian orange

1 oz. honey lavender syrup

1 oz. orange juice

Splash of club soda

Orange slice, for garnish

Steps

  1. For syrup, in small saucepan, steep lavender in 200 F. hot water for 20 minutes. Stir in honey and sugar until sugar dissolves. Strain and refrigerate syrup until ready to use.
  2. For mocktail, in cocktail shaker, combine Italian orange, syrup and orange juice with ice; shake to blend well. Pour into a glass and top with soda; garnish with orange slice.
