Cinnamon Quinoa Salad
Not all quinoa has to be savory. This filled with apples and spices, this quinoa salad would make for a nutritious morning meal.
Ingredients
2 cups diced apples
Cinnamon
Sugar
Nutmeg
2 1/2 cups peeled, diced sweet potato
1 gal. cooked quinoa
Vegetable stock
Dressing
1/8 cup sugar
1/2 cup apple cider
1 1/2 cups olive oil
Salt
Pepper
Steps
- Core apples, dice and toss with cinnamon, sugar, and nutmeg.
- Bake at 350°F until tender, cool immediately.
- Peel and dice sweet potatoes. Roast at 350°F with same spices as apples, until tender.
- Boil quinoa in vegetable stock for approximately 8-10 minutes, drain and cool.
- Make dressing by combining sugar, apple cider, salt and pepper to taste. Slowly whisk in oil.
- In mixing bowl, combine potatoes, apples and quinoa. Add dressing slowly (too much will make it soggy).
