Vinnie Livoti, director of food services for BlueCross BlueShield of South Carolina, headquartered in Columbia, loves a snack of late-night nachos, would go back in time to keep Vito Corleone from being killed and has been in foodservice for so long that he can’t imagine doing anything else.

That every day is something new.

That every day is something new.

Q. What do you consider to be your greatest achievement?

My family.

Q. What is the most unusual foodservice/catering request you have ever received?

Only green M&M’s for a catering event.

Q. If you weren't in foodservice what would you be doing?

I have been in foodservice so long I can’t imagine doing anything else.

Q. If you had a time machine what historical event or era would you visit?

The day Vito Corleone was shot so I could stop it—Fredo should have been paying attention!

Q. Which talent would you most like to have?

The ability to sing.

Q. If you could change one thing about yourself, what would it be?

I am a bit of an organization freak, so I would like to be able to relax that need.

Q. Which living person do you most admire?

My parents, John and Geri Livoti.

Q. What would be your dream vacation?

A month touring the Mediterranean with my family.

Q. What is your favorite meal?

Nachos—just chips and sharp cheddar.

Q. If you could eat dinner with anyone living or dead, who would it be?

Both of my grandfathers who passed before I could meet them.

Q. What is your guilty pleasure?

Late-night nachos.

Q. What will people always find in your refrigerator?

Shredded sharp cheddar cheese.

My family.

Gluten free.

Q. What activity is at the top of your bucket list?

Skydiving.

Chocolate-covered crickets.
