Robert Floccari, director of dining for Chartwells at York College of Pennsylvania, York, Penn., would love to tour Italy, wishes he could play piano and keeps a supply of Fresca in his fridge.

The people that I work with.

My drive—it’s 50 miles each way. 

Q. What do you consider to be your greatest achievement?

Having an employee nominate me for Food Service Director of the Month. 

Q. If you weren't in foodservice what would you be doing?

I’d be a graphic artist.

Q. Which talent would you most like to have?

To play the piano.

Q. If you could change one thing about yourself, what would it be?

My voice. 

Q. Which living person do you most admire?

My parents. 

Q. What would be your dream vacation?

To tour all of Italy. 

Q. What is your favorite meal?

Anything that’s prepared well. 

Q. What will people always find in your refrigerator?

Lemons, limes and Fresca. 

Q. What food fad do you wish had never started?

Gluten-Free foods for non-medical reasons. 

Q. What activity is at the top of your bucket list?

To go salmon fishing with my brothers.

I’m a morning person.
