University sticking with the meats faulted by WHO

The Sodexo-managed foodservice facilities at Northwestern University have no plans to change sourcing policies following a report linking certain meats to cancer, The Daily Northwestern reports.

The World Health Organization study concludes such familiar school-cafeteria items as hot dogs, pepperoni, bacon, sausage, and deli meats are “carcinogenic to humans.” However, health officials say the degree of added risk is not as dramatic as the headlines might suggest.

Last week Wednesday, The Physicians Committee for Responsible Medicine, a nonprofit representing 12,000 doctors, filed a petition with Agriculture Secretary Tom Vilsack, asking the USDA to encourage schools that offer processed meats—including hot dogs—to offer alternatives products, FoodService Director recently reported.

Rachel Tilghman, Sodexo’s director of communications and engagement at NU, told The Daily that there are only two ways dining hall policies can be changed: through an on-campus initiative or a corporate directive.

“If it’s a policy that the University or our director of dining or our program and our student groups here would like to change, we can also change it. No one has brought any changes to our team as of this week that I’m aware of,” Tilghman said.
