UConn Dining wins NACUFS award for vegan recipe

The University of Connecticut has won the National Association of College and University Food Services' Gold Medal award for its vegan crab cakes.

The Storrs, Conn., university recieved the top honor as part of the association's 2016 Best Vegan Recipe contest, which celebrates higher education institutions that incorporate healthy, creative vegan recipes on their menus, according to a release.

UConn will be honored by the association in July for the “Not So Crabby Vegan Crab Cakes with Remoulade Dressing” dish, which uses some ingredients sourced from the university’s student-run farm on campus.
