Texas District Consolidates Cafeterias to Trim Costs

Director says move will not affect students.

HOLLIDAY, Texas—Beginning this month, all students in the Holliday (Texas) Independent School District are being served from one cafeteria, according to Cafeteria Manager Becky Lightfoot. This semester, all meals are being served in the elementary cafeteria because the secondary kitchen is in need of major repairs. The 850-student district was operating two cafeterias—one at the elementary school and another at the combined middle/high school.

The consolidation also is a way for the district to trim costs. “Combining the cafeterias will allow more money to be saved and defer needed expenditures in the middle/high school cafeteria that total approximately $65,000,” Clark Boyd, superintendent, said in a letter to the district’s parents. The district is trimming costs because state funds are frozen at the 2005-2006 school year level and a tax referendum that would have brought more money into the district recently failed.

But Lightfoot said the consolidation should not be a concern. “We’ve done this before,” she said about operating out of only one kitchen. “I’ve been here for 18 years and until three or four years ago, we only had one kitchen. It’s not a big deal.” Lightfoot added that no staff members will be cut and that the only real difference will be that the secondary students will eat lunch later in the day than they currently do.
