As students return to cafeterias throughout the country this fall, some schools are increasing the amount of vegetarian and halal offerings on their menus.

At Gwinnett County Schools in Suwanee, Ga., a halal burger will be added permanently after it was piloted last school year, CBS 46 News reports. Also on the menu are more vegetarian offerings, such as chicken and waffles made with vegetarian chicken nuggets and a vegetarian pinwheel with spinach, broccoli and cheese.

The nutrition team at Greenville County Schools in Greenville, S.C., announced on its Facebook page that students will also be getting expanded vegetarian options this year after requesting them. These choices include a vegetarian cobb salad, veggie quesadillas, a baked potato bar with a choice of vegetarian chili and more.

Although procurement challenges will remain an issue this upcoming year, school nutrition professionals are working hard to expand students’ palates and add variety to menus.
