Cooper to Leave Berkeley
BERKELEY, Calif.—Ann Cooper, director of nutrition services for the Berkeley (Calif.) Unified School District, will leave the district in June.
As reported in FSD’s January 2009 issue (p. 38), “Colorado School District Hires Nutritionist Ann Cooper as Consultant,” Cooper and her firm, Lunch Lessons LLC, were hired to transform the 29,000-student Boulder Valley (Colo.) School District. Cooper began work last month in the district and plans to work part time at Berkeley and part time at Boulder Valley until June, when she will begin work full time as a consultant at Boulder Valley. “I was brought in to make changes and I did,” Cooper says about her time at Berkeley in the San Francisco Chronicle. “I never intended to retire here.”
Compostable Cold Cup Debuts at University of Washington
SEATTLE—A pilot program introducing a compostable cold cup, designed specifically for cold drinks, recently kicked off at 42,000-student University of Washington.
The cup provides the potential to save 150,000 cups from going into the landfill annually, according to a university press release. The cup is the last piece of the university’s sustainable disposable switchover, which has already seen the introduction of compostable plates, utensils and hot drink cups. It also brings the university one step closer to satisfying the city of Seattle’s requirement that all packaging be compostable by 2010.
"We are delighted to announce this step today in making UW operations more sustainable," UW President Mark Emmert said in a press release. "The UW aims to be a leader in environmental practices and the education and research underlying them. We are happy to be a partner with Coca Cola, International Paper and Cedar Grove Composting and are hopeful that this project will act as a model for other major institutions.”
CIA Training Deals With Food Allergies
HYDE PARK, N.Y.—The Culinary Institute of America has partnered with the National Peanut Butter Board to create an educational program called Food Allergies: Challenges and Opportunities.
The online education program uses text, video interviews and allergy-free recipes to educate foodservice operators about meeting the increasing demand for allergy-free cooking. Topics include information about the top eight foods known to cause 90% of food allergies; information about the most common problem areas for consumers with food allergies, areas such as salad bars and buffets; interviews with operators who have implemented successful food allergy policies; and cooking demonstrations featuring allergy friendly alternatives to common preparations.
“Food Allergies: Challenges and Opportunities for Food Service is an indispensable tool for businesses eager to meet the needs of their customers with food allergies,” Greg Drescher, executive director of strategic initiatives for The Culinary Institute of America, said in an article from The Gourmet Retailer. “We appreciate the leadership role that the National Peanut Board has taken in helping the foodservice industry deal with a very challenging issue.”
