At Duke University Hospital, preparation for the hurricane began at least five days before it hit, according to Duke Today. That included strict forecast monitoring, food ordering and a comfortable home-away-from-home for health system caregivers who volunteered to work extra shifts.
While the storm was raging outside, the Marketplace on the school’s East Campus was running normally. The foodservice team ordered two additional days of food supplies, arming itself with 400 pounds of rice, 460 pounds of broccoli, 1,000 pounds of potatoes and 1,200 pounds of chicken. The university brought in two refrigeration trucks, one for the East Campus and the other for the West.
“We’d rather be over-prepared,” said Robert Coffey, executive director of Duke Dining.
