When Hooters launched a fast-casual offshoot in a Chicago suburb, Restaurant Business, FSD’s sister magazine, had to check it out for themselves. Hoots is marketed as a hybrid, offering counter-service ordering plus a full-service bar and dining area. The restaurant was nearly full 15 minutes after opening. “That’s telling me this hybrid thing’s got some legs,” says Sal Melilli, COO for Hooters Management Corp.
