College hosts cooking competition to sharpen staff skills

Skidmore College in Saratoga Springs, N.Y., is hosting the sixth annual American Culinary Federation Conference and Competition this week.

The three-day event will culminate with a cooking competition modeled after the television program “Chopped.” Eleven higher-learning institutions will compete, including Cornell University, Ithaca College, Tufts University, University of Connecticut, Swarthmore College and Skidmore College.

Organized by Skidmore’s dining services, the college says that the event gives staff a way to sharpen their skills as well as highlight the school’s dining program. 

“The annual competition allows our staff an opportunity to enhance their knowledge, while also expanding their practical culinary skills,” says Mark Miller, director of dining services at Skidmore. “It’s important that our staff are actively learning and testing new recipes that can eventually be incorporated into Skidmore’s menus.”

The competition, sanctioned by the American Culinary Federation, will be held in a dining hall on Skidmore’s campus.
