Aladdin chef prepares indigenous meal for event honoring Native American cuisine

Aladdin Campus Dining Chef and Food Service Director at United Tribes Technical College in Bismarck, N.D., Anthony Bauer, participated in the American Indian College Fund’s Epicurean Award to Support Scholars event last week in Saint Paul, Minn.

The event featured Bauer, a member of Turtle Mountain Band of Chippewa, and other Native American chefs, who prepared indigenous dishes for attendees.

Bauer served Smoked Bison on Gullet Bread (a traditional bread from his tribe) topped with smoked balsamic glaze. The buffalo used in the meal was sourced by Bauer and his tribe, which performed a hunt. Bauer also prepared a jam topping using choke cherries grown on his property.

Proceeds from the event will support Native American scholars.

"Gatherings like today are about sharing and talking. And for me, buffalo is about giving. It’s what I like to do. It’s what I’ve been taught to do,” Bauer said in a statement. "This buffalo has been with me since our hunt and we are on this journey together. And I am looking forward to today’s gathering and sharing the meat with the supporters of the College Fund because our work supports Native students everywhere.”
