Now that football season is underway, it’s time to give that game day favorite—chicken wings—a new twist. Chef Alex Ong serves up this Asian variation for University of Massachusetts fans. Ginger, kaffir lime leaves, grapes, honey and red pepper flakes combine for a sweet-hot-tart flavor profile.
4. Guajillo Chicken Tortilla Pizza
Brown rice tortillas form the crust for these Mexican-inspired personal pizzas served at UCLA’s Bruin Plate Restaurant. Chef Jeff Viviano purees guajillo chiles to marinate the chicken and saves some for the pizza topping. Roasted poblanos, caramelized onions and cotija cheese ramp up the flavor even more.
5. Nashville Hot Spicy Fried Chicken Sandwich
Nashville fried chicken has traveled from its Tennessee roots to pop up on menus across the country. At Legends of Notre Dame, a restaurant and pub on the university’s campus, chef Josh Maron menus the spicy chicken as a sandwich. He tosses a crispy fried chicken breast in housemade Nashville-style hot sauce and layers it on a toasted brioche bun with mayo, lettuce and pickles.
