National Hamburger Day is coming up on May 28—the perfect time to revisit the burger lineup and offer some new variations. These five burger recipes will inspire you to fire up the grill and try something a little different.
Chef Stephanie Izard mixes ground beef with shiitake mushrooms to create her version of the plant-forward blended burger. Housemade seasonal condiments, including asparagus tapenade, rhubarb mostarda and brown butter miso aioli, are differentiators here.
Nothing says barbecue season like a charcoal-grilled burger. Chef Michael Symon doubles up on barbecue flavor by layering grilled pork burgers with chile-spiced pulled pork. A topping of melted Gruyere cheese and pickled onions completes the flavor profile.
Chef Frederick Guerrero combines grains and beans to make these vegan burgers. Farro provides a meaty texture, while red and green bell peppers add specks of color and mushrooms, chipotle and cumin boost flavor.
Ground turkey makes for a lower-fat burger that gets high marks for flavor when seasoned and sauced Thai-style. The veggie slaw topping the burger adds both color and crunch.

Salmon Burgers with Rhubarb Chutney
At her restaurant in Alaska, chef Mandy Dixon sources locally caught salmon and locally grown rhubarb and onions for these seafood burgers. The zesty rhubarb chutney pairs beautifully with the salmon and would also be great with another grilled fish or pork, says chef Dixon.
