Aramark has partnered with chef Grace Ramirez to create its latest dining concept, La Latina Cocina.

The concept will debut at the end of this month at seven college and university locations, where it will remain in operation through the spring semester.

La Latina Cocina’s menu was largely inspired by Ramirez’s cookbook La Latina and includes items such as a mojo pulled pork taco platter, tres leche cake and dragon fruit agua fresca. Students will be able to order items as-is or customize their own versions.

“Guests and clients have heightened expectations for featuring authentic foods from their community and the surrounding area,” Jack Donovan, CEO of Aramark Higher Education, said in a statement. “Chef Ramirez understands that food is culture and loves sharing the nourishing traditions of Latin American cuisine—its vibrancy, incredible creativity and, above all, comfort.”
