A tofu fajita burrito is one of the many burrito options available at Goody’s Place, a Mexican concept at the University of California at San Diego. The vegan-friendly option includes tofu, red and green bell peppers, onion, black beans, Spanish rice, shredded romaine lettuce, guacamole, chipotle ranch, pico de gallo, corn salsa and cheddar jack cheese wrapped in a tortilla.

At Rockin’ Baja Coastal Cantina, a Baja-inspired restaurant with locations throughout California, consumers can enjoy a Burrito Del Mar, which includes sauteed shrimp, langostino lobster and blue crab meat, cheese, poblano cream sauce, tomato, cilantro and cotija cheese. The dish is also served with black beans and citrus lime rice.
