Consumers are looking for healthier menu options—even if what they consider to be “healthy” keeps changing.
About 40% of consumers say their definition of what is healthy has changed over the past two years, according to Technomic’s 2018 Healthy Eating Consumer Trend Report. What consumers define as healthy can run the gamut from vegan options to foods high in nutrients to menu items that simply leave them feeling full and energized.
When asked what types of healthier dishes they’re ordering, consumers named salads, chicken dishes, vegetables, less-sugar items, protein-packed options and more. That range gives some insight into the kinds of food people consider healthy. But, for non-commercial foodservice operators, keeping up with the healthy eating trend can be something of a moving target. And consumers send mixed messages—many also like familiar, high protein options such as the traditional American cheeseburger. So how can operators make sure they’re offering something for everyone?
One great option for operators is to try blended meat options, which offer the traditional appeal but are also healthier since they contain less fat, cholesterol, and calories.
