Orange Juniper Spiced Ahi Tuna

This healthy fish entree combines citrus and spices for a unique burst of flavor.
Ingredients
6 6 oz. ahi tuna filets
3/4 cup orange juniper spice

Yield: ¾ cup
1 1/4 tbsp. Juniper Berries
2 tbsp. Granulated Orange Peel
2 tbsp. Sucanat
2 tbsp. Ground Coriander
1 1/2 tbsp. Granulated Lemon Peel
1 1/2 tbsp. Ground Turmeric
2 tsp. Ground Cumin
1 tsp. Ground Allspice
1 tsp. Granulated Garlic
1 1/2 tsp. Granulated Onion
1 tsp. Ground Mustard Seed
Steps
- Gently heat Juniper Berries over medium heat in non-stick pan until aromatic.
- Remove from heat and cool to room temperature.
- Grind Juniper Berries in spice grinder or with mortar and pestle.
- Combine all spice ingredients and mix with whisk.
- 30 minutes prior to cooking, coat tuna with spice.
- Sear tuna over medium heat until desired doneness.
- Slice tuna in half for each 3 ounce portion.
