Green Oats and Ham

Oatmeal is a typical Irish breakfast food, but here it’s given a savory spin by combining the cooked oats with sauteed ham, garlic, kale and spinach. It’s a combo that can stand in for rice, quinoa or couscous as a grain-based side. The name of the dish is a takeoff on the Dr. Seuss classic, Green Eggs and Ham. 

Ingredients

12 cups water
1 1/2 tsp. salt
6 cups old-fashioned oats
2 tbsp. olive oil
4 cups diced ham
3 cloves garlic, minced
5 cups chopped fresh kale
5 cups chopped fresh spinach
1/2 tsp. ground black pepper
1 lemon, zested and juiced (1/4 cup fresh lemon juice, 1 tablespoon zest)
3/4 cup unshelled, toasted salted sunflower seeds

Steps

1. In heavy large saucepan, bring water and 1 teaspoon salt to a brisk boil. Stir in oats; return to boil. Reduce heat; simmer 8 minutes, stirring occasionally. Let stand covered or transfer to steam table pan; cover. Let stand 30 minutes.

2. While oatmeal is cooking, add olive oil to a large saute pan over medium heat. Once oil is hot, add ham and saute until ham begins to caramelize, about 4 minutes. Add garlic, kale, spinach, remaining salt, pepper and lemon zest. Saute until all kale and spinach is wilted, about 5 minutes.

3. Stir sauteed ham and greens into oatmeal. Top each 1-cup serving with 1 teaspoon fresh lemon juice and 1 tablespoon toasted sunflower seeds.
