Confetti Crab Wrap
This delightful wrap is filled with flavor, color and texture. Sweet crab and crunchy vegetables are folded into flour tortillas. A vinegar and oil drizzle adds some zip.
1 lb. crab meat
8 Flour tortillas or lavish bread
1 head Romaine or Napa Cabbage, shredded
1 large sweet onion, diced
1 1/2 cup diced red, green and yellow bell peppers (combined, not each)
1/2 cup Cilantro
2 tsp. seafood seasoning
1 cup virgin Olive Oil
1/2 cup Balsamic vinegar
1. In a large mixing bowl, combine 1 cup peppers, lettuce, cilantro and onion with seafood seasoning, oil and vinegar.
2. Lightly fluff crab meat into salad mix so as to not break up the lumps of meat.
3. Fill tortillas or lavish shell with crab mixture and roll closed. Cut each in half and stand on ends to display on plate. Sprinkle remaining diced peppers over plate as a garnish.
