Citrus Scallops

These Citrus Scallops bring a unique taste to the classic scallop dish. Featuring blood orange juice and Key lime juice, these scallops make for a flavorful seasonal dish.
Ingredients
8 tbsp. clarified butter
64 oz. bay scallops
8 tbsp. Grand Marnier
8 tbsp. Key lime juice
4 blood orange, juice only (use rest of orange for garnish)
8 tbsp. chopped parsley
Salt if desired
Steps
- Melt butter in medium sauté pan over high heat.
- Add scallops and sauté until no longer opaque, 5 to 7 minutes depending on size of scallops.
- Add Grand Marnier and sauté 30 seconds.
- Add juices and sauté 30 seconds.
- Remove from heat, stir in parsley and salt if used.
