Bubble tea is trending at Boba 7, where chef Keung incorporates chewy tapioca pearls, or “boba,” into drinks. This version is a milky tea, but Keung also creates boozy boba cocktails. The boba can be made from scratch by cooking tapioca flour in water, but they also are available ready-made from Asian product suppliers.

Ingredients

1 Darjeeling black tea bag
3 oz. creme anglaise vanilla sauce
2 oz. honey
6-8 dashes ground cinnamon
Small ice cubes
2 tbsp. boba (tapioca pearls)

Steps

  1. Brew tea in boiling water for 7 to 10 minutes; discard tea bag.
  2. In cocktail shaker, combine creme anglaise vanilla sauce and honey; stir in a little hot water to loosen. Add cinnamon and shake well.
  3. Add ice until shaker is 3/4 full; add tea and shake well.
  4. Measure boba into 24-ounce glass. Pour tea over boba and serve with a straw.
