Chicken a la Jessie

This recipe was developed to incorporate more fruits into main dishes.

Ingredients

4 8-oz. grilled chicken breasts
3 cups fresh baby spinach
1/4 cup blanched, slivered almonds
2 oranges, segmented
6 strawberries, quartered
1 oz. olive oil
1 tsp. minced garlic
1/4 cup lemon juice
4 mint sprigs

Steps

  1. Slice chicken breast in strips, on diagonal.
  2. Combine chicken, spinach, almonds, oranges and strawberries, and toss gently.
  3. Mix olive oil, garlic and lemon juice. Pour over salad mixture and toss gently.
  4. Portion into 8-ounce servings, garnish with mint sprig and serve.
