These beet vegetable chips are a healthier—and more colorful—alternative to traditional potato chips or french fries.
Ingredients
10 fresh beets
Olive oil
Salt
Pepper
Steps
- Cut off large nub from side of beet. Slice beets on slicer, not too thin but not too thick. Soak in water overnight.
- Drain beets and pat dry. Coat in olive oil, salt and pepper. Spray parchment-lined sheet pan; line beets on pan as close together as possible. Spray another sheet of parchment paper, place on top of beets and place sheet pan on top.
- Cook in 250°F oven for 1 hour. Flip pans over keeping together and cook for 1 hour more. Remove from oven and flip pans back over. Remove top pan and top parchment paper. Let sit overnight before serving.
