2. Chorizo, Almond and White Bean Soup

Chorizo, Almond and White Bean Soup

For added texture, chef Neal Fraser uses whole blanched and sliced almonds in this Chorizo, Almond and White Bean Soup. The almonds add a crunchy contrast to the white beans while offering a warm, subtle flavor to complement the piquant chorizo.

3. Nancy’s French Onion Soup

Nancy’s French Onion Soup

Chef Jim Cooley's mom worked when he was a kid, and with three children, she was always cooking in large batches. She would break dishes down in serving sizes and freeze them for a quick meal later. She had what must have been a 30-quart stockpot, so her batches were quite large, Cooley says. The black pepper in this recipe would tend to settle on the bottom of the pot, so you always knew when you were eating the last of it because you would have black pepper covering the bottom of your bowl, he says.

Chicken Noodle Soup with Thyme-Infused Egg Noodles

The beauty of this homemade soup lies in the crafting of the fresh pasta, says Executive Chef Jennifer Leamons. "We make our own noodles with fresh thyme in the dough, and we also infuse the oil for the pasta dough with fresh thyme," she says. She adds that you can also do something similar with spaetzle or even add caramelized onions to the dough for a different take.

New England Clam Chowder

With its location in New England, the University of Massachusetts often looks to regional dishes to serve in its dining venues.  This clam chowder is cooked New England-style, with a creamy white base, fresh local clams from the coast, potatoes, onions and bacon. It makes a hearty soup that's suitable for lunch or dinner.

Howard County Public School System in Ellicott City, Md., will be offering free lunch to students for two days during winter break, The Baltimore Sun reports.

This is the first time the district will be providing meals over winter break. The lunch will be served on Dec. 27 and 28 at two sites in the community.

About 22.2% of the district’s students are enrolled for free or reduced-price meals. The district served 66,276 meals last summer during its summer meal program .

Cranston School District in Cranston, R.I., has hired a collection agency to help reduce its lunch debt , NBC 10 reports.

The district’s chief operating officer sent a letter to parents saying that the district would be using a collection agency next year to collect outstanding lunch balances after other collection methods have failed. Parents who owe $20 or more and haven’t paid in the last 60 days will receive a letter from the agency starting Jan. 2, 2019.
