Pear and Sunchoke Soup

Chef Ethan Stowell combines fresh pears, sunchokes and earthy chanterelle mushrooms to create this creamy soup. The seasonal produce infuses the soup with fall flavors, and a bit of bacon adds smokiness. Together, the ingredients make for a satisfying bowl on a cold day.

For added texture, chef Neal Fraser uses whole blanched and sliced almonds in this Chorizo, Almond and White Bean Soup. The almonds add a crunchy contrast to the white beans while offering a warm, subtle flavor to complement the piquant chorizo.

3. Nancy’s French Onion Soup

Nancy’s French Onion Soup

Chef Jim Cooley's mom worked when he was a kid, and with three children, she was always cooking in large batches. She would break dishes down in serving sizes and freeze them for a quick meal later. She had what must have been a 30-quart stockpot, so her batches were quite large, Cooley says. The black pepper in this recipe would tend to settle on the bottom of the pot, so you always knew when you were eating the last of it because you would have black pepper covering the bottom of your bowl, he says.

4. Chicken Noodle Soup with Thyme-Infused Egg Noodles

Chicken Noodle Soup with Thyme-Infused Egg Noodles

The beauty of this homemade soup lies in the crafting of the fresh pasta, says Executive Chef Jennifer Leamons. "We make our own noodles with fresh thyme in the dough, and we also infuse the oil for the pasta dough with fresh thyme," she says. She adds that you can also do something similar with spaetzle or even add caramelized onions to the dough for a different take.

Some diners also say they are trying to be more aware of nutrients and vitamins, while others are looking for whole-grain and enriched options.

Consumers are pretty well-educated about clean labels, gluten-free options and the value of vegetables in a healthy diet. But diners are continuing to evolve in their never-ending quests to eat healthier, with functional or “healing” foods gaining ground.

So finds Technomic’s recent Healthy Eating Consumer Trend Report , which reveals that eaters are seeking foods that boost the immune system, increase energy, improve digestion and relieve stress. In...
