One thing that few foodservice directors report hearing questions about—at least not yet—are non-GMO, or genetically modified, foods. Loudoun County Public Schools is one exception. “I’ve been asked my opinion on GMOs by second-graders,” Marketing and Community Outreach Coordinator Stefanie Dove says. “We are in an affluent county, so students have access to this information at home.” Despite those questions, she hasn’t heard demand from parents to eliminate GMOs.
