Star Anise Asian Noodle Soup

Yield: 24, one-cup servings
6 qts. chicken stock
6 oz. fresh ginger, peeled and cut into 1/4-in. slices
12 pods star anise
3/4 cup soy sauce
Bring stock, ginger and star anise pods to a simmer over medium heat.
remove from heat and allow to sit, covered, 10 minutes.
strain and add soy sauce.
serve alone as broth, or pour over cooked thin noodles, garnished with cooked shrimp, snow peas and cilantro, if desired.
