Monte Cristo Sandwich

YIELD: 16 SERVINGS
4 cups whole milk
12 large eggs, beaten
1 cup flour, all-purpose
2 Tbsps. baking powder
32 slices country bread, thick sliced
2 lbs. honey-smoked ham, deli sliced
3 lbs. roast turkey breast, deli sliced
32 slices Swiss cheese
2 cups vegetable oil
4 cups raspberry preserves
1. Combine milk, eggs, flour and baking powder in bowl; whisk to blend. Reserve batter.
2. To assemble single serving: Place 1 slice bread on flat work surface; top with 2 oz. ham, 3 oz. turkey and 2 slices cheese. Close sandwich with second slice of bread.
3. Dip sandwich in batter; drain excess. Heat 2 Tbsps. vegetable oil in skillet; grill sandwich for 2 to 3 minutes on each side or until golden brown.
4. Diagonal-slice sandwich and place on plate. Dust lightly with powdered sugar. Serve with ¼ cup raspberry preserves portioned in a ramekin.
