University to scrap many unhealthy menu items

Rutgers University at New Brunswick in New Jersey is revamping its food offerings to include more healthy menu items, nj.com reports.

The university will make changes to both its takeout menu and its sit-down offerings at all-you-can-eat dining halls. The overhaul will bring more nutritious options to the menu, as well as scratch-made options such as baked chicken tenders, and salmon and turkey that is roasted and smoked in-house. More plant-based options such as tofu and broccoli stir-fry will also be available.

School officials say the revamp was largely driven by student feedback.

"Our students are concerned about what they are eating and where it comes from,'' Joseph Charette, executive director of dining services, told nj.com. "They ask a lot of questions, and they are eating smarter, so we have to make more choices available that are not only better for their health but better for the planet."

The university plans to roll out the changes gradually, starting in April, with the full revamp to be completed by the end of the fall semester.
