University restaurant teaches students business sense

Northern Illinois University’s student-run restaurant Ellington’s not only will serve locally sourced food, but will also teach students how to run an eatery, reports the NIU Newsroom.

Ellington’s—named after renowned jazz musician Duke Ellington—opens in six weeks in the student center. Officials say a three-course lunch meal will cost $10 and students will learn how to work with a specific amount of ingredients to make cost-effective menus.

“Our goal is for students to learn and understand how to make the best of what’s in season and what’s local. It’s a smart financial aspect to running a restaurant. There’s no point in spending an excessive amount of money bringing ingredients in,” Chef Bryan Flower, food systems lab coordinator for NIU’s Family, Consumer & Nutrition Sciences program, told the Newsroom.
