University food truck ditches tacos for comfort food

Faced with falling student interest, the University of Connecticut has debuted a whole new menu for its Food for Thought food truck, according to the university’s student newspaper, The Daily Campus.

Officials say the truck, which made its debut last fall with a taco menu that featured crickets as a garnish, will now serve comfort food and beverages, including sandwiches, soups, kale and spinach dumplings, bubble tea and hot chocolate.

The plan is to rotate the menu each semester, Dining Services Assistant Director of Retail Operations Charles Couture told The Daily Campus. Yet he noted that the truck will continue to serve crickets, which were “a hit.”

“We’re trying to keep people guessing and interested in the trucks,” Couture said. “I’m excited about this menu—I think it will be well received.”
