Alaska researchers seek to expand fish-to-school program

Researchers at the University of Alaska–Fairbanks are looking to expand a project that aims to bring locally sourced salmon into school cafeterias and classrooms throughout Alaska.

The goal of the three-year Fish to School program is to help students understand how food choices affect their health and benefit their communities, reports newsminer.com.

“Our key message is to illustrate or demonstrate how what they eat goes beyond just their nutrition, how it impacts their communities and their environment,” Andrea Bersamin, principal researcher, told the website. “Ultimately, we want to improve diet quality and reduce [chronic disease].”
