How to speed ripening with plastic wrap

Few products may get more use in the kitchen than plastic wrap. At Pennsylvania-based health-insurance provider Highmark Pittsburgh, staff use plastic wrap to cover and keep tables sanitized during food prep, says Cameron Clegg, executive chef for Parkhurst Dining. “I think [it’s] one of the most underestimated kitchen tools,” he says. Clegg’s staff also uses the wrap as a makeshift piping bag and to cover avocados and melons to speed the ripening process.
