Many of our residents like to have a brunch-type menu for the midday Sunday meal, and others prefer a traditional selection of entrees. We found success by combining brunch and dinner and offering a brunch-type item along with two upscale entrees every Sunday in our five-week cycle. As a result, our Sunday meal volumes increased by 19 percent. The residents enjoy having the options—especially the poached eggs.
