Bruno Tison was the executive chef of the Fairmont Sonoma Mission Inn and Spa in California, which received the coveted Michelin start three consecutive years. Then, after 30 years in the restaurant industry, Tison decided to move into healthcare foodservice and joined the team at New York’s Northwell Health.
Tison knew making changes would be difficult, but he’s already made significant changes in the menu, purchasing and production at the 22-hospital healthcare system. We caught up with Tison to learn about his journey into healthcare dining and what’s next for Northwell Health.
