At our pho bar, we offer housemade broth with a variety of proteins and vegetables for endless customization. We can only skip one week before requests pour in and we have to put it back on the menu.


Oriental broth
1/2 cup fresh minced garlic
1/4 cup fresh minced ginger
3 tbsp. olive oil
1/3 lb. chicken or beef base
3 gal. water

Bar ingredients
Rice noodles
Egg noodles
Diced chicken
Italian sausage balls
Sliced pepperoni
Baby shrimp
Diced tofu
Diced bell pepper
Diced red onion
Sliced jalapeno
Sliced mushroom
Chopped cilantro
Diced carrots
Sliced water chestnuts
Quartered artichoke hearts
Chopped green onions


  1. For broth: Lightly sweat garlic and ginger in oil without browning. If it starts to brown, quickly add water. Add base and dissolve completely.
  2. For service: Serve stock as hot as possible. Add noodles first, sides of choice, then broth, and serve.
