Lemon Poppy Seed Vegan Muffins

YIELD: 12 muffins
1 lb. Vegansweet baking muffin mix
1 1/4 cup water
1 Tbsp. lemon peel, grated zest
1/2 tsp. lemon juice
2 Tbsps. poppy seed
In large bowl, combine powdered mix and water and mix well. Stir in lemon peel, lemon juice and poppy seeds.
Spoon evenly into muffin cups. Bake for 15-20 minutes or until golden brown.
