After a three-year, $60 million renovation to the building housing the café at Cornell College of Veterinary Medicine, the dining program seemed ready to go…except it wasn’t. The menu was fine, but not quite local, fresh and unique enough. The concepts were OK…but not quite special enough. That’s the directive that came from American Dining Creations Division VP Don McQuarrie. “This needs to be a game-changer,” he said at the time.
