When the Sodexo culinary team at George Mason University in Fairfax, Va., expanded their barbecue, grilling and cookout horizons to include Korean, Mediterranean, Indian and more global flavors, they upped their ‘cue game exponentially. These unexpected versions are served at GMU’s Around the Globe series year-round for a guest count of up to 285 as the program has gained popularity.
