North Dakota may be landlocked, but with help from the Alaska Seafood Marketing Institute (ASMI), the University of North Dakota (UND)’s dining team makes Grand Forks, N.D., feel downright coastal. Recently a colorful sustainable seafood dinner—and a step away from Midwestern fish like perch and walleye—made a splash with students.
