North Dakota Capitol cafeteria gets a makeover

The six month, $1.1 million renovation starts on Monday and the last remodel was done in 1981. And the Capitol Grounds facilities director says the changes are needed.

Late last month, Texas Tech University, in Lubbock, opened an interesting new dining hall. Now, I haven’t seen the facility, which according to the university has more than 20,000 square feet devoted to food and cost $45 million to build. So I can’t say whether the dining concepts are anything more than varied, which I gleaned from a news article announcing the grand opening.

There was a time, not too long ago, when it was very possible to go to a fine dining restaurant where the “old rules” regarding preparation, service and diner decorum still held sway. But while high-end food can still be found in any number of white-tablecloth establishments, the classical “French-style” restaurant is definitely an endangered species.

Dinner volume more than doubled at Towson (MD) University's Newell Dining Hall as a result of a $2.2-million renovation completed this past fall.
